Schwäbischer Kartoffelkuchen

Zutaten:
300 g Mehl
½ Würfel Hefe
½ TL Zucker
1 ½ TL Salz
150 ml Wasser, lauwarm
3 EL Öl
700 g Pellkartoffeln vom Vortag
4 Becher saure Sahne
2 Ei(er)
Salz
Muskat
Zimt
evtl. Pfeffer
evtl. Schinken oder Speck, geräucherter
Zubereitung
Aus Mehl, Hefe, Zucker, Salz, lauwarmem Wasser und Öl einen Hefeteig kneten. Ein Vorteig muss nicht unbedingt sein. Gut 30 Min. gehen lassen. Auswellen und in ein rundes Kuchenblech (ca. 30 cm) geben. Den Rand möglichst weit am Rand hochziehen. Den Backofen auf ca. 180 - 200°C (Ober-/Unterhitze) vorheizen. Für den Belag die Kartoffeln fein reiben. 1 Ei verquirlen. Von der sauren Sahne 2 - 3 EL abnehmen und beiseitestellen. Die Kartoffeln mit saurer Sahne, 1 Ei und etwa der Hälfte des verquirlen Eis verrühren. Mit Salz, Muskat und (nach Geschmack) Pfeffer kräftig würzen. Die Kartoffelmasse sollte in rohem Zustand ziemlich salzig schmecken, nach dem Backen haben die Kartoffeln das dann weitgehend neutralisiert. Die Masse auf dem Hefeboden glatt streichen. Das restliche Ei mit der zurückbehaltenen sauren Sahne verquirlen und mit dem Löffel auf der Kartoffelmasse verteilen. Den Kuchen mit Zimt bestäuben (ja, das ist ein salziger Kuchen - Zimt gibt ihm eine ganz eigene Note). Wer möchte, kann jetzt noch in Streifen geschnittenen Schinken oder Speck auf dem Kuchen verteilen. Den Kuchen auf der mittleren Schiene ca. 60 Min. backen. Der Kuchen sollte eine schöne braune Farbe angenommen haben.
Der Kuchen schmeckt lauwarm oder kalt. Wenn er "sauber" portioniert werden soll, sollte er einmal abgekühlt sein, da der Belag erst dann vollständig durchstockt und richtig schnittfest wird.
